Step 4:

Turn the fillet you have cut for the flesh to face up and the skin down. Slide your knife between the flesh and the skin of the fish, down the whole fish length until you separate the fillet from the skin.

Step 5:

Having separated the fillets from the fish, place it on the cutting board. With precision, cut between the flesh and the ribs, then throw away the ribs.

Step 6:

You can get the second fillet by repeating the process.
